Ingredients
  

  • 2 large sweet potatoes peeled and cubed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 4 cups vegetable or chicken broth
  • 1 cup creamy peanut butter
  • Salt and pepper to taste
  • Optional toppings: Greek yogurt chopped cilantro, green onions, chili oil

Instructions
 

  • Preheat your oven to 400°F (200°C). Roast sweet potatoes on a baking sheet for about 25 minutes until caramelized.
  • In a large pot, sauté onions, garlic, and ginger until fragrant.
  • Add roasted sweet potatoes and broth, then bring to a boil.
  • Stir in peanut butter and reduce heat. Let it simmer for 15 minutes.
  • Use a hand blender to reach your desired texture. Season with salt and pepper.
  • Serve hot topped with Greek yogurt and herbs if desired.

Notes

The soup can be made in advance and the flavors improve overnight. Feel free to experiment with different nut butters and additional ingredients like spinach or tomatoes.
