A delightful and sneaky treat that incorporates zucchini into a soft and sweet chocolate chip bread, perfect for kids and adults alike.

- 2 medium zucchinis, grated
- 1 cup sugar (brown or white)
- 2 large eggs
- 1/2 cup melted butter or oil (not olive oil)
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Hefty pinch cinnamon
- 1 cup chocolate chips
Instructions
- Shred the zucchini using a cheese grater. Press lightly with a paper towel if it’s very drippy.
- In a large bowl, combine the eggs, sugar, melted butter or oil, and vanilla. Mix with a wooden spoon.
- Add the grated zucchini and stir gently until combined.
- Mix in the flour, baking powder, baking soda, salt, and cinnamon over the wet ingredients and stir until just combined.
- Fold in the chocolate chips.
- Pour the mixture into a greased loaf pan and optionally sprinkle extra sugar on top.
- Bake at 350°F for about 45-50 minutes, checking with a toothpick after 45 minutes.
- Allow to cool before serving.
Notes
Serve warm with milk or toast slices with peanut butter for an extra treat. Also suitable for freezing.
