- 4 cups beef broth

- 1 large onion, diced
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced

- 2 teaspoons dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onions and garlic, cooking until softened.
- Add the beef stew meat to the pot, browning it on all sides.
- Stir in the tomato paste, thyme, paprika, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Add the carrots and potatoes, then reduce heat to low and cover.
- Simmer for about 120 minutes, or until the beef is tender.
- Adjust seasoning as necessary and serve hot, garnished with fresh parsley.
