Ingredients

  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onions and garlic, cooking until softened.
  2. Add the beef stew meat to the pot, browning it on all sides.
  3. Stir in the tomato paste, thyme, paprika, salt, and pepper.
  4. Pour in the beef broth and bring to a boil.
