These fun Vegan Blueberry Ghost Hand Pies are perfect for parties, Halloween, or as a special vegan treat, featuring a flaky pastry and sweet blueberry filling.

- 2 sheets of puff pastry (vegan & gluten-free)
- 100g fresh or frozen blueberries
- 50g caster or granulated sugar (plus extra for sprinkling)
- 2 tablespoons cornstarch or cornflour
- 2 teaspoons lemon juice
- 50g icing sugar
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the blueberries, caster sugar, cornstarch, and lemon juice.
- Roll out the puff pastry sheets and cut them into squares or circles, using two pieces for each hand pie.
- Place a spoonful of the blueberry mixture in the center of one piece of pastry.
- Cut out spooky ghost shapes from the second piece of pastry.
- Carefully place the ghost shape over the filling and seal the edges by pressing down with a fork.
- Place the pies on a baking tray lined with parchment paper and sprinkle a little sugar on top.
- Bake for 15-20 minutes, or until golden brown and crispy.
- Let them cool for a few minutes, then dust with icing sugar before serving.
Notes
Seal the edges well to prevent leaking. You can customize fillings and shapes for different occasions.
