- 1 deep-dish pie crust (store-bought or homemade)
- 3–4 large ripe tomatoes, sliced
- A handful of fresh basil leaves
- 1 cup shredded sharp cheddar cheese
- 1/2 cup mayonnaise
- 1/2 small onion, thinly sliced
- Salt and black pepper to taste
Instructions
- Prep the tomatoes by layering them on paper towels, sprinkling with salt, and letting them drain for 15-20 minutes.
- Blind bake the pie crust at 350°F for about 10 minutes until slightly golden.
- After the crust cools, layer the tomato slices, basil, and onion if desired.
- In a separate bowl, mix together the cheese and mayonnaise to create a spread.
- Spread the cheese mixture over the tomatoes and bake at 350°F until golden and bubbly, about 30-40 minutes.
- Let the pie cool for a few minutes before slicing and serving.
Notes
Serve warm with a green salad and a drink of choice. Good for up to 3 days in the fridge, although it may become soggy.
