- 1 lb honey garlic sausage
- 2 large sweet potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Slice the honey garlic sausage and add it to the baking sheet with the sweet potatoes.
- Roast in the oven for 25-30 minutes, or until sweet potatoes are tender and sausage is browned, stirring halfway through.
- Garnish with fresh parsley and serve warm.
Notes
Cut the sweet potatoes into even pieces for even cooking. Feel free to add other vegetables for more flavor.
