- 3–4 cups fresh, frozen, or canned peaches
- 3/4 cup sugar (for fresh), 2/3 cup (for frozen), 1/2 cup (for canned)
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon (optional)
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- In a medium saucepan, combine the peaches with sugar, lemon juice, and a pinch of salt. Let it sit for a few minutes.
- Whisk cornstarch with a splash of water to avoid clumps, then stir it into the peach mixture.
- Bring the mixture to a gentle simmer over low heat, stirring often.
- After about 10 minutes, the filling should thicken and become glossy.
- Remove from heat and stir in vanilla or cinnamon if desired.
- Let it cool before using in your preferred dessert.
