Description

Delicious and easy grilled chicken skewers marinated with ranch seasoning, garlic, and parmesan cheese, perfect for BBQs or weeknight dinners.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp ranch seasoning
  • 1/2 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Optional: 1/4 cup Greek yogurt or milk

Instructions

  1. In a mixing bowl, combine chicken pieces, ranch seasoning, minced garlic, and parmesan cheese.
  2. Add olive oil and lemon juice, and optionally Greek yogurt or milk. Mix well.
  3. Let the mixture marinate for at least 25 minutes (up to overnight in the fridge).
  4. Thread chicken onto skewers, soaking wooden ones if necessary.
  5. Preheat grill to medium-high and grill skewers for 5 to 7 minutes on each side until cooked through.
  6. Brush remaining marinade on skewers while grilling to enhance flavor.

Notes

For a crispy texture, add extra parmesan cheese on top before grilling. Pair with rice, quinoa, or roasted veggies for a complete meal.
