Instructions
- Season the chicken with salt, pepper, and any other desired spices.
- Grill chicken over medium-high heat for 6-7 minutes on each side until fully cooked.
- Meanwhile, boil or steam broccoli until tender but still bright green, about 3-5 minutes.
- Cook rice or quinoa according to package instructions.
- In a bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice, salt, and pepper to make the creamy garlic sauce.
- Assemble bowls with a base of rice or quinoa, topped with grilled chicken slices, broccoli, and generous amounts of creamy garlic sauce.
- Serve immediately, adding optional toppings as desired.
