- 1 medium fresh zucchini, grated
- 1 cup all-purpose flour (or whole wheat)
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup coconut oil (or butter)
- 1 cup sugar (coconut, brown, or regular)
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, combine the grated zucchini, melted coconut oil, sugar, and vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 15-20 minutes, checking with a toothpick for doneness (it should come out with a few crumbs).
- Allow cooling in the pan before cutting into squares.
Notes
These brownies are best stored in an airtight container. They can also be frozen for longer storage. If you want a lower sugar option, try using coconut sugar.
