Description

A simple and delicious baked yellow squash recipe with a crispy parmesan topping.


Ingredients

  • 4 medium yellow squash, sliced into thick rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese
  • 1/2 cup cracker crumbs
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon garlic powder
  • Fresh herbs (basil or parsley), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the yellow squash slices with olive oil, salt, pepper, and garlic powder.
  3. Layer the squash in a baking dish and sprinkle the parmesan cheese and cracker crumbs on top.
  4. Bake in the preheated oven for 15-20 minutes, or until golden and tender.
  5. Remove from the oven and let cool slightly before serving. Garnish with fresh herbs if desired.

Notes
