Quick and easy sausage pancake bites that combine fluffy pancakes with juicy sausage, perfect for busy mornings or lazy weekends.
Ingredients

- 2 cups pancake mix (choose one that requires only water)
- 1 cup water or milk (adjust based on pancake mix instructions)
- 8 cooked breakfast sausage links (any flavor you prefer)
- 1–2 tablespoons maple syrup (optional, for added flavor)
- Butter or non-stick spray (as needed, to grease the muffin pan)
Instructions
- Preheat oven to 350°F. Grease a mini muffin pan.
- Mix pancake mix, water or milk, and maple syrup in a bowl.
- Cut each sausage into thirds. Place one piece in each muffin cup.
- Pour batter over sausage, filling each cup about three-quarters full.
- Bake for 11-13 minutes, until golden. Cool a bit and pop them out.
- Serve with extra syrup for dunking.
Notes
These bites can be made in advance and stored in the fridge for up to four days. They can also be frozen for later use.
