- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups packed grated zucchini
- 1 cup chocolate chips
- Extra chocolate chips for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together the oil, granulated sugar, and brown sugar.
- Add the eggs and vanilla extract to the wet mixture and mix until smooth.
- Combine the wet and dry ingredients, mixing just until no lumps remain.
- Fold in the grated zucchini and chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top if desired.
- Bake for 50 to 60 minutes or until a skewer inserted into the center comes out mostly clean.
- Allow to cool in the pan for at least 15 minutes before removing.
Notes
This bread keeps well at room temperature for up to 3 days covered. For longer storage, freeze slices wrapped in cling film.
