Ingredients

- 3–4 medium Potatoes (Russet or Yukon Gold), cut into equal-sized pieces
- 14–16 oz Smoked Sausage, any variety
- 1–2 cups Cheddar Cheese, shredded
- 1 packet Ranch Seasoning
- 1/2 cup Sour Cream, optional
- 2 tablespoons Butter
- Salt and Pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the potatoes, sliced sausage, ranch seasoning, and half of the shredded cheddar cheese.
- Add melted butter, sour cream, salt, and pepper; mix well.
- Transfer the mixture to a greased baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil, top with remaining cheddar cheese, and bake for an additional 15 minutes until bubbly.
- Let the casserole rest for 5 minutes before serving.
