Instructions
- Squeeze grated zucchini to remove excess water.
- In a bowl, combine the dried zucchini with flour, parmesan, eggs, salt, black pepper, and garlic powder.
- Heat a skillet over medium heat and add oil to prevent sticking.
- Scoop small amounts of the mixture into the skillet and flatten slightly.
- Cook fritters for about 3 minutes on each side until golden brown.
