- 4 cups milk

Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the diced onion and garlic to the pot, cooking until softened.
- Stir in the butter and allow it to melt, then whisk in the flour to create a roux.
- Slowly add in the milk and broth, whisking constantly until the mixture thickens.
- Add the diced potatoes and simmer until fork-tender.
- Stir in the cheese until melted and creamy. Season with salt and pepper.
- Top with crispy bacon, green onions, and a dollop of sour cream before serving.
Notes
For a gluten-free option, substitute flour with cornstarch mixed with water. You can use dairy alternatives for a vegetarian version.
