Ingredients

  • Olive oil
  • Salt
  • Pepper
  • Lemon zest

  • Garlic cloves
  • Honey or maple syrup (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub olive oil, salt, and pepper onto the chicken breasts.
  3. Add lemon zest and dried herbs under the skin.
  4. Stuff garlic cloves under the skin if desired.
  5. Place the chicken on a rimmed sheet pan.
  6. Roast in the oven for 30-40 minutes, or until the thickest part reaches 165°F (75°C).
  7. Let the chicken rest for 8-10 minutes before slicing.
