Ingredients

- 3 medium zucchinis, sliced into 1/2 inch pieces
- 2 tablespoons olive oil
- 1/2 teaspoon Italian herbs
- 2 tablespoons grated parmesan cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Place sliced zucchini into a medium-sized bowl.
- Drizzle with olive oil and add Italian herbs, parmesan cheese, salt, and pepper. Toss well to coat evenly.
- Lay the seasoned zucchini slices in a single layer in the air fryer basket.
- Set the air fryer to cook at 375 degrees Fahrenheit.
- Air fry the zucchini for 5 minutes, then shake the basket.
- Continue air frying for an additional 3-5 minutes, or until tender and golden brown.
Notes
Serve hot as a snack or side dish. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in air fryer for freshness.
