Description

A delicious and healthy snack combining fresh zucchini with rich parmesan cheese, air fried for a crispy texture without extra oil.


Ingredients

Scale
  • 3 medium zucchinis, sliced into 1/2 inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon Italian herbs
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place sliced zucchini into a medium-sized bowl.
  2. Drizzle with olive oil and add Italian herbs, parmesan cheese, salt, and pepper. Toss well to coat evenly.
  3. Lay the seasoned zucchini slices in a single layer in the air fryer basket.
  4. Set the air fryer to cook at 375 degrees Fahrenheit.
  5. Air fry the zucchini for 5 minutes, then shake the basket.
  6. Continue air frying for an additional 3-5 minutes, or until tender and golden brown.

Notes

Serve hot as a snack or side dish. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in air fryer for freshness.
