Description

Crispy and healthy air fryer zucchini that makes for a delicious snack without the oily mess.


Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 1 tablespoon olive oil
  • 1/2 cup gluten free panko or cornmeal (optional)
  • Salt, to taste
  • Pepper, to taste
  • Smoked paprika (optional)

Instructions

  1. Preheat the air fryer to 400°F.
  2. In a bowl, toss the sliced zucchini with olive oil, panko or cornmeal, salt, pepper, and smoked paprika.
  3. Arrange the zucchini in a single layer in the air fryer basket, making sure they are not overcrowded.
  4. Cook for about 7 minutes, shaking the basket halfway through.
  5. Check for doneness; they should have golden edges and crispy texture.
  6. Remove and serve immediately.

Notes

For best results, avoid overcrowding the zucchini in the air fryer. They can be stored with a paper towel in a container for up to 3 days.
