- 2 medium zucchinis, sliced into rounds
- 1 tablespoon olive oil
- 1/2 cup gluten free panko or cornmeal (optional)
- Salt, to taste
- Pepper, to taste
- Smoked paprika (optional)
Instructions
- Preheat the air fryer to 400°F.
- In a bowl, toss the sliced zucchini with olive oil, panko or cornmeal, salt, pepper, and smoked paprika.
- Arrange the zucchini in a single layer in the air fryer basket, making sure they are not overcrowded.
- Cook for about 7 minutes, shaking the basket halfway through.
- Check for doneness; they should have golden edges and crispy texture.
- Remove and serve immediately.
Notes
For best results, avoid overcrowding the zucchini in the air fryer. They can be stored with a paper towel in a container for up to 3 days.
